Anise Hyssop Drop Cookies

1⁄3 cup anise hyssop, florets removed from stem

3 eggs

1 cup sugar

1⁄2 teaspoon vanilla

2 cups flour

1 teaspoon baking powder

1⁄2 teaspoon salt

Preheat oven to 325°F.

Line 2 to 3 cookie sheets with aluminum foil (lightly greased).

Chop florets fine.

With electric mixer, beat eggs till thick and lemon-colored.

Add sugar and flower petals and beat for 5 minutes, then add vanilla.

Sift together flour, baking powder and salt and add to egg mixture.

Continue beating for 5 minutes longer.

Drop batter by teaspoonfuls onto lined cookie sheets, spacing well apart.

Bake till they begin to color (about 12 to 15 minutes).

Grilled Fennel on the BBQ  (Anise in French)

1 fennel bulb

1 1⁄2 teaspoons olive oil

1 tablespoon balsamic vinegar (or 1/2 lemon juiced)

1 tablespoon Dijon mustard (coarse if you have it)

1 tablespoon minced garlic

salt and pepper

In a small bowl, whisk together oil, vinegar, mustard, and garlic, salt and pepper to taste.

Cut off fennel stalks, quarter fennel bulb lengthwise (she said some remove the core, she doesn't bother). Brush each fennel quarter with marinade.

Prepare grill and preheat to medium. Grill fennel, turning several times with tongs, until slightly charred and crisp-tender. Can also be done on a ridged grill panel.

Applesauce with Star Anise and Dates

Core and chop the apples leaving the skin on and place in a cooking pot.

Place the apple juice, dates, star anise, lime juice and red chili powder in the same pot and cook on medium heat for 15-20 minutes.

At this point the apples should be very soft and the mixture should be fairly thick. Let it cool.

Remove the star anise, puree in a blender and use as needed.

Star Anise Strawberries

450 g small fresh strawberries

300 ml fresh orange juice

4 tablespoons caster sugar

2 star anise

2 teaspoons caraway seeds

Hull the strawberries, place them in a bowl and set aside.

Place the orange juice, sugar, star anise and caraway seeds in a small pan. Bring to the boil and simmer for 5 minutes, then pour over the strawberries and allow to cool. Chill for at least an hour.

Divide the strawberries between 4 glasses ans serve accompanied by meringues and a spoonful of yogurt.

3 -4 cups ice cubes
