Beets With Sesame (Or Anise) Vinaigrette

1 lb beet (after cooking there should be about 2 cups)

6 tablespoons mild olive oil

2 teaspoons asian toasted sesame oil

2 tablespoons fresh lemon juice

2 teaspoons sesame seeds, toasted, plus extra for garnish

salt, pepper

Trim the tops of the beets, leaving 1/2 inch of stem attached to minimize bleeding. Put the roots on a pot and cover with cold water, heat to boiling, reduce heat and simmer uncovered until tender.Pour off most of the hot water and add cold water to the pot. Peel the beets while they are still warm.

Alternatively, rub the uncooked beet roots with a little oil and bake them in a covered pan at 350 degrees until tender.

If the beets are large, cut them into 1/4 inch slices. If they are small,cut them into 4 or 8 wedges each. Place the cooked and cut beets in a large mixing bowl.

Whisk the remaining ingredients together, pour over the still warm beets, and toss to coat. Sprinkle with extra sesame seeds and serve.

Aunt Dunette's Italian Anise Biscotti

Aunt Dunette's Italian Anise Biscotti

4 eggs

2 teaspoons baking powder

1 cup sugar

1⁄2 cup vegetable oil

2 teaspoons anise seed

2 cups flour

1 teaspoon vanilla

Beat eggs, sugar, and oil. Mix in flour, baking powder, vanilla, and anise. Spread in greased metal ice cube trays or loaf pans. If using loaf pans, only fill 1/3 full. This recipe makes about 3 trays or pans worth.

Bake 20-25 minutes at 350 degrees. Remove from oven and cut in slices crosswise. Place slices on baking sheet and brown under broiler, then flip slices and brown on other side. Watch the cookies carefully, it is easy to burn them in this step. Normally the best idea is to broil with oven door open a crack and watch as they go.

Cumin & Cayenne Chickpeas with Star Anise

1. drain chick peas set aside.2. crack cardamom pods. Peel the shell to release the seeds and collect in a mortar and pestle, crush seeds.3. in medium pot set over medium-high heat. Heat oil until it begins to shimmer. add onion and saute for 8 to 10 minutes until soft and starting to brown. stir in the garlic saute a couple of seconds reduce heat to medium add tomato paste. Add cardamom and all remaining ingredients and saute for 1 or 2 minutes 4. Add the chick pea's and 1/2 cup of water. Heat mixture stirring occasionally to blend flavors. serve warm. reheats well.

Espresso Icee With Anise Cream

1 1⁄2 cups boiling water

1⁄4 cup packed light brown sugar

1 tablespoon instant espresso powder

1 1⁄4 cups light vanilla ice cream, softened

1⁄4 cup frozen fat-free whipped topping, thawed

1 1⁄2 teaspoons sambuca romana

Combine water, sugar, and espresso in an 8 inch baking dish, stirring until sugar and espresso dissolve.

Cover and freeze for 45 minutes.

Stir espresso mixture with a fork. Continue to freeze mixture, stirring every 45 minutes, until completely frozen (about 4 hours).

Combine ice cream, whipped topping and liqueur.

Remove espresso mixture from freezer, "fluff" with fork.

Serve in a glass and top with whipped topping mixture.
