Brown you rice in olive oil and minced garlic, about 1-2 cloves. Add hot water, just enough to submerge rice. Add 1 tbsp Knorr Caldo de Tomate-tomato bouillon, tomato sauce about 1/2 can of a 8 oz can, freshly ground black pepper corns and cumin (there's a mix sold) or you can use the ground cumin/pepper. If the soup is too salty, add cubed potatoes and more water about 1/2 more. Bring to a boil, cover, then simmer for about 15 minutes... Believe me this is the recipe for authentic Mexican rice. Here's a list of a few spanish rice recipies on the allrecipies website, click here:

^ For a full flavor cook it all at once, heck you can even foil it and bake it in the over for a nice fluffy bottom to a chicken caserrole... for a clean flavor cook the rice separate from the vegetables, when it's about 5 minutes till done throw the veggies in a med-to-high-heat pan and when they're not-quiet-soft yet you can mix it with the rice. If you want to add chicken to it, marinate the chicken in a lemon-pepper sauce for a few hours; but when you throw them on the pan use olive oil instead of butter - then grab a few lemons and squeeze them right on top of the chicken and add a little salt (to taste.) Cook at medium heat, and raise the heat as the chicken begins to brown - you may need to put some foil ontop of the chicken and then put something heavy ontop of it (a teapot full of water, or a heavy pan, etc) ; this assures you that the chicken will cook through all the way. Chicken + the other stuff makes good rice; yup
