A basic sweet and sour would be good. What do you have in the cupboards? Pineapple juice, vinegar and a little corn flour to thicken would be perfect but you could replace the pineapple juice with tomato puree (or ketchup) and sugar instead.Coconut milk Fresh Garlic Basil, parsley, cilantro or other fresh herbs

You can use the olive oil in place of the butter and go ahead and use the 1/4 cup flour. Worst that would happen is the soup is a bit thinner. I would make a change however. In step 3, add the flour and curry powder to the vegetables in olive oil and stir and cook for a few minutes to get a good roux base before you add the liquid. Then add the liquid after a few minutes. You're looking for a flour color of light brown/tan (not white). If after everything is complete the soup is too thin, you can knead 1 tbs butter and 1 tbs flour till well combined and drop it in the soup while stirring (called a burre manie)

That is a good Idea. You can also add some to pasta. As a former chef I use to cook my mussels for soup and service in the same broth practically for the whole night, then strain, I used a coffee filter as some sand can settle in the bottom of the pot, you can make risotto, soup, sauce for fish, add it to poach fish broths or use it with a bit vinegar for a seafood salad dressing.

You could take a few chicken breasts and slather it with the sauce, then bake it-throw some sliced zuccini and yellow squash in the baking dish too (YUM!) and maybe cover it with provolone or mozzarella cheese (if you're trying to do lower fat, skip the cheese). You could really do anything with it, sounds yummers!
